A 160 thermostat is fine. Whoever tells you different doesn't know the difference. Running too cold? No... the reason some people say that a 160* stat runs too cold is because the calibrations on the EPROM dictate that at about 110-120* F the car goes into closed loop. And with a 160* stat in the winter, you may not ever reach closed loop. 160* stats kick ***. If you want to run 190-200 degrees then run a 180 stat. Its up to you if you want to gain horsepower or lose it. My car runs between 160-180. Anything over 200 or so you can literally feel the loss of power. Colder is better unless you go too cold and start running in open loop all the time. But as I said before, you aren't too cold at 160*.

Heat makes power...my car feels stronger around 190 than it does at 160. Only reason the car runs better cold is because of the colder air and fuel charge. Cold air induction and you wouldn't notice any difference running that cold.
