My suggestion would be to check the VSS (vehicle speed sensor) with a scan tool and make sure that it reads correctly at speed. This will affect fuel mileage as well.
Another thing you may want to check- the back brakes may be sticking due to parking brake use. I have seen this happen before where they drag and cause sh!tty gas mileage.
If all else fails install a TPI'd V8

You can also tell the ratio of your gears by marking a line on the drive shaft and a line on the tire. (where you can see both)
Spin the tire 1(one) revolution, and count how many revolutions the drive shaft makes.
Example: 3 and 3/4 turns= 3.73's
3 and 1/4 turns= 3.23's and so on...
