cam = short for camshaft. It's a long piece that goes in the engine that had lots of lobes on it. There's a chaim that turns the cam, and the lobes move the intake and exhaust valves open and closed, therefore allowing air/fuel to enter the engine and leave through the exhaust valves. different cams open/close the valves for different periods of time, and to different heights. a cam kit would just be a cam that comes with some of the necessary accessories to make it work right.

blower = basically a supercharger. typically uses a turbine driven by a belt to force air into the engine at different compession levels (psi).

stroker = usually refers to getting a new crankshaft. the crankshaft increases the stroke of the motor (how far down the pistons move) which therefore increases the displacement of the engine (ie: 346ci is a stock LS1 displacement, most typical strokers increase it to 383ci), hence making more power.

hope that helps a bit.

Oh, also, check out www.howstuffworks.com

Go to the automobile section and they have very nice how this and that works with nice flash animations and everything that will definitely teach you a lot about how an engine works.
