the passengers side panel has 3 quick release trim tabs that you turn to unlock and it all comes out. The drivers side one just pulls straight up and out...beware of speaker connections if you have them back there, you don't want to pull them out.

Nice job, I did almost the exact same thing last fall when I installed my Walbro. You can buy 2 foot square pieces of 24 gauge sheet metal at Home Depot, it's pretty thick and very close the the thickness of the sheet metal used in that spot. I did that and used stubby point self tapping screws, they are shorter than the normal pointy 5/16 screws and have a flat tip to be sure I didnt hit the fuel lines. RTV'd it down too, didnt paint it though, mines silver anyway

Those back seat panels come out fairly easily. The only tricky part is that you have to pull out the center section of the hook that is used to hang coat etc. and then that hook will come out. The rest of the panel just pulls out. There might be a screw or two towards the front where it meets the panel that runs next to the door.
