It's from your PCV valve not properly venting. Similar thing happens in my CTS, I've looked into it. The CTS has no PCV valve. The goo you describes looks like butterscotch pudding? It's from short trips, I asked my dad who was a GM tech for 30 some years. I changed my intake gaskets and it has helped the problem. Some of the vapor from the cooling system works its way into the crankcase. Try changing your PCV valve since you can. Clean the goo as best you can. If it persists, consider changing intake gaskets, those related to cooling passages that could allow coolant/coolant vapors to escape into the crank case. If your car has a lot of miles, gasket changing may just be the best preventative maintence to you don't end up washing out the bearings.

Do you take a lot of short trips, that don't allow the engine to warm up fully? Do you start the car and let it idle periodically to keep the battery up, or for some other reason? That will cause the condensation/oil emulsion that you are seeing, in the colder parts of the engine.
If it never gets subjected to those conditions, reread what is posted above regarding the PCV system.
