fix the darn fans first. shoebox has a great info library to get you in the right direction. you could always take it to a shop. if you keep overheating you will really hate doing head gaskets. FIX THE FANS=FIX THE FANS

The first suspect item to your problem would be the thermostat. I would suggest a 160.

Just a couple SIMPLE things to do! Pull the fan relay and SEE if it LOOKS burnt... If it does, take a short wire and and plug BOTH ends into where the relay plugs in and see if the fans come on... if they do, then it most likely is just a relay...
Done this before on my own car and then installed a fan switch...
Loved it, when I took my car to the track, I could turn my fans on to help cool down before my run!

Final forum on the heat issue.......

I drove the car today. It runs even better but if I sit in a driveway for 5 mins it slowly goes to 240 and when I rev it it cools, but thats from the coolant moving faster. Relays are good, fuse is good. If I shut the car off and wait 10 min and start it the needle hit the red then goes down real slow to 225. I think maybe the needle is shot because in the morning before I start the car the needle was laying on the thin plastic on the dash I thought the needle was broken!! I start the car and the needle was still caught in the thin plastic in the dash so I smack the dashboard and and it laid on 160 degree's. I don't want to band aid with a switch, the car shouldn't over heat when it idles for 5-10 min after driving .

New: Temp sensor, sensor on water pump, new coolant, bleed 20 times, thermostat is stock I think and the fans never go on, new fuses and relays are good. This **** does the same routine basic routin alot so its not the head gaskets so I think it the thermostat it opens and close at weird times I study the needle and it never really the same thing. I will save my money and do the thermostat in two weeks and I will let you guys know. Worse comes to worse is the fans and I will just flip the switch a ever red light or at a parking lot. Car does not over heat it for the half hour of driving just that when it finally hits the thermostat ratings then it acts gay.
