You know what - I did have to "grind" the corner of the mount, but I cant
remember if it was because of that bolt. Not that I ground it, but I used a
very sharp knife to whittle away the clearance that I needed.
I did the "grinding" while the mount was in place, because I think that
the upper "u-shaped mount" (that is bolted to the block) was hitting on
the urethane as I slowly lowered the engine down to mate with the poly.
I have somewhere to run right now, but I can take photos of the final
install a bit later, if it's helpful.

I have jet hot headers which are very similar to hooker headers. I just finished replacing my pass side motor mount. Its a bit cramped but definitely doable. As for the drivers side, I'll have to get back to you on that tomorrow when I try that side.

Just a quick update:
I just finished doing the driver's side motor mount. Do not over tighten the new bolts that hold the camshell in place, as they will shear off
I found the driver's side to be a bit more of a pain than the pass side. Less clearance with my jet hot headers. Also, I had to loosen the bolts holding the other motor mount bracket on the k-member, and moved it around some to get the through bolt back in.
All in all, the install took a couple hours. Not as rough as some people make it out to be
