New engine, New problems, Need help!

I don't even know where to start. First, the engine I guess.
EVERYTHING on the inside of the engine is new.
CC502
1.5 RR's
355
2.02/??? - Bigger valves - yes, I should know the size.
Pcmforless tune
Accel 30#
BBK 58mm
Heads ported, flow like 247in, 170ex
Hooker shorties with all air / exhaust hookups
No cat
AC delco spark plugs gapped at .050
OLD opti - but worked before - will replace next
OLD coil
Some other stuff that I don't think is related to my problem - but ask cuz maybe I forgot something?

On an emission test, my HC's are around 2000 - where 220 is the limit. When engine was spanking new with stock tune and thermostat, my temps were about normal and car would idle, but I had to open up the TB some to get it to idle.

On new tune with 100 miles on engine and 160* thermostat my car stays at 1700 rpm and temps do not go over first dash line in 93 camaro - is that 140 degrees? So that seems weird, b/c my temps used to always be pretty high.
So am I staying in open or closed loop? I have no idea which is which. I'm not much of a computer guy.

So could I have a miss? Is the computer just dumping tons of fuel in there? Is there a way for me to test for a miss? I tried cold starting and feeling the headers for a cold one - is that at all reliable? - (All were hot.)

Anyway the car is much faster than it was before and runs great. Though I sometimes think the engine feels rough. ( I did switch to poly mounts.) Any help would be greatly appreciated.

I would check the coolant temp sensor that feeds the gauge if it never moves. The one on the head, not the waterpump. You might just not be getting a reading to the gauge.

valves are 2.02/1.60
No codes (except 12) when making jumper connection under dash
The coolant temp moved fine before new tune and thermostat.
What about the fuel pressure regulator? Could that not be functioning properly?
