Look, the simplest explanation is that your oil level is low and upon hard breaking, the oil in the pan is sloshing forward and uncovering the pump's pickup.
Think of a pickup as being an oil pumps "drinking straw".
Perhaps your car has an aftermarket pan or dipstick and you is reading inaccurately, leading you to believe that the oil level is fine, when in fact it's low.

I'd drain the oil and fill it up with the recomended amount to see for sure if the right amount of oil is in there, and also note how much oil you drain out first.

Another thing you might wanna try is drain the oil and get a rubber mallet and crack the pan a few times. See if you hear the pickup bounce around. My 89 formula did this, I'm pretty sure thats whats wrong. They're just pressed in, I think I hit something and it knocked it loose. Put another quart of oil in it for now and fix it soon.

mine's doing the SAME thing right now...it started doing it a few days ago...when the oil's very full, it wont really do that, but when it's a little lower, it will.
oil pickup...i'll have to check into that.

forgive my ignorance, but doesnt an oil pan gasket cost considerably less than $500?
