overheating, HELP!!!

HELP!!!
i was washing my car, waxing, and cleaning it inside out to get it ready for storage.
Well after i finished, i figured i would let the engine run for a little bit. i was reving it up to 2500-3500 when i happened to look at my temp guage. it was almost at the redline. so i said, "oh ****" and i turned the car off. i opened the hood to see how hot the eninge was. it was not that hot at all and i was wondering what's wrong. so two minutes later i started it up and the temp dropped about 60deg.
i then parked it in my garage and shut it off, i got out and noticed that a carbon smell was coming out of my exhaust.
i am wondering is this because of carbon build up, will it hurt my engine if i don't take care of it right away, and what should i use to take care of it.
extra's: engine was not hot but heated up on the outside and hour later i left for school, i went to check the temp and it dropped about 180deg. usually it takes 3 hours to cool down from a hot engine.
the coolant is fine and there is no leaking from the water pump

Sounds like possibly air in the coolant system. check the level in the rad when the car is cold and add if it needs it. check the thermostat to make sure it's opening at the correct temp (put the thermostat in a pot of boiling water and monitor the temp it opens at with a thermometer) and replace if it needs it. If the problem is still there bleed the coolant system.
