SD Mode

What or the disadvantages of an unhooked MAF? I figure speed density mode shouldn't be that bad as long as the sensors it runs off of are good.

SD is fine powerwise, and when set up correctly, in regards to emissions also. But, that is also the achillies heel of SD. Emissions requirements are such that emission compliance is required of oem installed devices (without adjusting/tuning) for X # of miles. As the engine VE deteriorates with mileage, MAF equipped vehicles can maintain compliance. SD equipped vehicles must have the VE periodically readjusted/ recalibrated to maintain compliance.
