Well, in a stock pan situation I doubt less oil will help.
Assuming, the pickup is right, windage is on correct and at the proper distance, I'm at a loss on this one... what do the bearing clearances look like on both the mains and rods? I'm grasping at straws here..
Pickup height can be checked by putting some clay on the end of the pickup and placing the oil pan back in place. Stock pan, stock type pickup, probably 3/8" clearance is fine judging by what I've read. Put some tape over the screen to avoid getting clay shoved in there.

I was thinking we need to make a:
Javier Tranny Fund... help the guy out there are guys in Florida that need to race to. lol
Daniel, All I can think of with the rebuild and losing oil pressure..... hmmmm let me think about that one. Something is not right.... how did the crank look? What bearing clearances did you get on the rebuild?

when i hit it i go to about 55-60psi and start to climb to 70 psi until about 5000 then i drop to 40 psi....i run valvoline 30 weight(reccomended by mechanic) with a ph1218 truck filter stock pump tight bottom end
the oil comes out fine...the clearences are tight, im only losing pressure at higher rpm
what is the stock spring supposed to release at? is there a spec on that?

those clearences arent that tight....they are just looser then javiers
