When tapping new threads....
...how do I make sure I'm tapping straight, and not crooked? My crank bolt threads are completely stripped, so I'm going to tap them to 1/2".
Do I just eyeball it and hope it goes on straight?

are you tapping a new hole or are you retapping the hole? that will matter, but most importantly make sure you are using a tap that has a starting section. i cant remember the name, but if you look at it it will have a section at the front that looks like it has some threads almost started. vesus a bottoming tap which has threads right at the end. Most taps are tapered (like TA Dreaming was trying to describe). Start slowly, use lubricant, constantly eyeball the heck out of it from right angles so you make sure you are keeping the planes straight. It is tough to do one freehand. With the tapered tap, you have a little leeway to get it going straight in the beginning. If it does not look right, back it out and start again. Once it is past the tapered part of the tap, you are pretty much committed.

Also use some high grade cutting oil... (Tap Magic). I tap steel everyday & you can absolutly tell the difference in the quality of the tapped hole when using a high grade cutting oil verses a standard lubricant. It really shouldn't be a problem keeping it straight.
