looking for a vehicle something in the range of a safari/astro or even a tahoe/jimmy style that i can remove the rear seats for room for my rott.

I got a 96 plymouth voyager that you can take both rear seats out of. 99% clean and rust free. 3.0 v6, air, cruise, tilt, power locks, stereo even works good. decent van, looks, runs, and drives better than the $1200 asking price I have on it would indicate. only issue is some smoke if you sit and idle a long time. clears right up once you're moving though. presumably valve seals would fix it, but I haven't worried about it. I just keep an eye on the oil level. Tires, exhaust and brakes are all good. Could use an alignment.

no prob. it does get good mileage though. 20-24 or so depending on driving habits.
