You're missing hubs, unless you are re-using your old ones.

looks like you've got the parts, but i'd suggest a gear puller to get the old knuckles off safely

I am putting the LS1 brakes on my 94z today and was wondering if the proportioning valve is different and needs to be changed out or if its the same for all the f body cars?

You mean master cylinder? We dont have prop valves from the factory. Master cylinder's are the same.
