I threw on some stainless steel lines, powerslot rotors and hawk pads so I'll be flushing the brake lines for the first time. I'll be sticking with GM Dot 3 fluid unless you can recommend an alternative. So how many bottle's will I need to flush and fill? About two bottles?

i got one quart size bottle or prestone dot 3
no diference if u use gm or not,

the quart size bottle was cheap and was plenty to fill the entire system in my 3rd gen, and i had enough left over when i had to change the master cylinder again

Valvoline makes a synethic brake fluid called SynPower. Boiling point of 500 F which is higher than Dot 3 & 4. About $7 a quart. Flushing the system takes about a quart but buy 2 while you're at it; better than running back to the store. The fluid is easily found at most chain auto stores.

Ok, I flushed the brakes and I'm all good. Two bottles worked fine.
I went for a test drive around the block and felt great but now I have to see what's slightly grinding on the right side as I'm at a slow cruise. Out of curiosity I used a temp gun and the front right rotor was about 10-15 degrees hotter than the rest so maybe it's sticking or something. Anyhow...back to messing with this again.
btw, thank you for suggesting the valvoline. I stuck with the gm fluid but I'll look into it next time.
