urgent need of some car help here...

heres the deal:
Went and got the final changeover, my 3.4 is now running a complete 3400 topend (heads from a 2000 + Grand am with the 1.76" intake valve, d shaped exh ports, 3400 plenum and lower intake, 19# injectors) after trying to do a intake swap myself, and bending a valve.
Short Short Version:
i had someone do all the labor as i didnt have the time to track it down slowly myself. so i get it done, and i go to pick up the car, drive it around the block..im like..decent power... i step on the gas.. rpms climb about 100 and then car stalls like the gas cutout.. im like wtf..and i try to restart, wont, try again, wont, try again...BAM! - huge backfire.. so i coast over to the side of the road, and let it sit a minute, restart, take it back, talk with the guy -- he says, i dunno, leave it for a day. i do so. he says its ready the next day - i come and drive it around the block, same problem, he says he doesnt know so im like f*** this isht and just drove it home, dont want the idiot working on my car.
so as of today, car runs, but stumlbes, ive tried everything i can think of, everything seems to be working fine according to my auto x-ray, but i get misfires / detonation on acceleration and such. im wondering if my car is running too low an octane (i know you are gonna be like - on a 3.4?!?)
i only ask this cause the CC on the 3400 heads are 28cc and the ones on the iron heads are 53cc. even tho i used the grand am pistons to keep the CR down to 9.5:1 -> its still a huge jump in CC size. so i just wonder if now i have to run higher than 91 octane to get the car to idle properly / accelerate.
mind you the car has no problem with WOT at high rpm. only low / take off.

thanks for the compliment on the exhaust -- as for wether it started doin it after, yea it did..but. i cant directly attribute it to the guy. cause its a wierd *** problem, i took it to a second mechanic and the second mechanic couldnt figure it out either.
anyway -- i've been talking with a friend of mine that programs for the 3.4 DOHC and gave him an auto x-ray reading i did last nite, WOT Run - 99% throttle :
Right Block Learn: 137
Left Block Learn: 136
A/F: 12.6:1
Injector Pulsewidth: 21.7 mS
according to him im going past static on my injectors. they are supposedly 19#, but i dont know exactly how to check. im thinkin a AFPR / Fuel Pump / 24# or more FI is in the works.
anyway -- i've been talking with a friend of mine that programs for the 3.4 DOHC and gave him an auto x-ray reading i did last nite, WOT Run - 99% throttle :
Right Block Learn: 137

A/F: 12.6:1
